Spicy kimbap uses gochujang lineage inside the roll rather than as dipping sauce. For kimchi kimbap: chop 1 cup kimchi, press in a sieve 10 minutes until juice barely drips, then toss with 1 tsp gochugaru and 1 tsp sesame; wet kimchi weeps and turns the roll pink and soggy within an hour if you skip the drain.

Spicy tuna: drain tuna fully, mix with 1.5 Tbsp mayo, 1 tsp gochugaru, 0.5 tsp gochujang, and a pinch of sugar; it should be brick-red and mound, not flow. Add cucumber or radish as a dry crunch so heat has texture to ride with rather than a single tuna column.

Assembly order for wet fills: rice, then a dry leaf (perilla or egg) barrier, then the wet fill, then dry crunch on both sides so rice never directly contacts moisture. That leaf is edible architecture.

Heat scale clearly. Classic kimchi kimbap is medium; spicy tuna with added chili crisp is medium-hot; add fresh jalapeño julienne only if you label it. Mixed trays should distribute heat by roll so no single eater gets only fire.

Pair with a savory-sour broth like miyeok-guk or simply kimchi brine shooter on the side; cold water alone does little against capsaicin and you used it in the fill — let that echo become the pairing.
