Folded kimbap (접는 김밥) skips rolling entirely: place gim flat, cover half with rice, add fillings in quadrants, fold like a sandwich into a triangle. It is a dorm invention that needs no mat, no cut, and travels better than a cylinder because seams face inward, not around a curve.

Both carry tradeoffs. Nude kimbap needs slightly stickier rice to hold the outer layer and must be handled with damp hands; folded kimbap needs thinner fillings so the triangular fold closes without bulging — thick ham rows fail the fold and push gim to tear.

Trend economics favor folded for speed: a shop can assemble folded kimbap 30% faster than rounded rolls during lunch rush with less training, while nude kimbap justifies a price bump as 'premium' via appearance. Both sell because they renew a familiar food.
