Fillings prepped Sunday keep well: blanched spinach (squeezed), stir-fried carrots, pan-fried fish cake, and danmuji all hold 3 days chilled in separate containers; rice should be cooked morning-of for best texture but can be cooked Sunday, cooled, and revived Monday with a splash of warm water and sesame toss.

Roll the night before, not the morning of, for Monday-Tuesday lunches; wrapping whole in foil and slicing at noon (or morning-of) preserves moisture better than slicing Sunday. Each extra cut face is a moisture loss channel.

Gim barriers help. Lay a perilla leaf as a moisture shield between tuna mayo and rice for chamchi rolls that will sit 8 hours; for veg rolls, a thin egg sheet as a liner keeps carrots from bleeding color into rice.

Store at 40°F, not room temp, if more than 3 hours to eating, and transport with a small ice pack — cooked-fillings kimbap is not shelf-stable despite room-temp service at home. Picnics that run 90 minutes can be room temp; work lunches that run half a day need cold.

Batch math: 1 cup dry rice makes 2 rolls (12 coins). Prep 6 rolls Sunday for 3 lunch days for two people; store rolls whole, eat chamchi first (faster dry), veg second — a simple rotation that teaches FIFO without a spreadsheet.
